FIELD NOTES: Issue 04 – July 2026
OUR CORE RANGE IS GROWING
We release plenty of new coffees throughout the year, but many of them are only with us for a short time. Some arrive as Limited Release coffees, like last month's Carbonic Maceration lot, while others come in as seasonal replacements before making way for the next harvest.
This one is different. Our latest release is here to stay, and it fills an important gap in the Chimney Fire Coffee core range.
Welcome Indonesia: our first ever dark roast single origin.
Over the years, our core range has been carefully curated to offer a wide variety of flavours, origins and roast profiles. From bright, vibrant light roasts to smooth, balanced medium roasts, each coffee has its place. But there was one thing we kept hearing from customers in the roastery shop: "I love a strong, dark coffee." And while Revival will always be a favourite, we knew there was room for another dark roast. One that brought boldness and depth, but with the traceability, character and origin focus of a single origin coffee.
Our new Indonesia comes from Sumatra, an origin we have only featured once before in our old Discovery range. This is a Mandheling coffee, one of Sumatra's most sought-after coffees, loved for its full body, low acidity and distinctive earthy complexity. It is processed using a traditional wet-hulling method, developed in response to a humid climate and frequent rainfall, where drying coffee slowly in its parchment can be difficult. Instead, farmers remove the parchment earlier than they would in fully washed processing, while the bean still holds more moisture.
In the cup, expect a smooth, balanced mouthfeel with layered notes of Rooibos tea, tobacco and spices. Bold, earthy and full of character.
Whether you already love a darker roast or you're curious to explore how a single origin can taste at the deeper end of the roast spectrum, Indonesia brings something new to our core range. If you're on a Selection Subscription, keep an eye out for it very soon!
(Field Notes is a short printed update we include with subscriber deliveries, sharing what we're seeing across the farms and coffee regions we work with.)
